Default Christmas Eve Meal

Not BBQ, but awfully good enchiladas the wife made, New Mexico style with the egg on top. Excellent Christmas Eve tradition from her family.

Oh yeah! I'd hit that. What you got there are Enchiladas Montadas (Mounted) with the egg. Beans, rice, quacamole, and salad too!
