I saw cameraman's post about rib trimming stew and started to think...
I trimmed up the racks for yesterdays smoke and took the cut off tips and bones and made a pork broth adding carrots and onions. After simmering for a few hours I strained the broth. Meanwhile I smoked the trimmed meat for about an hour to an hour and a half. I sweated a leek and some poblano chilis from the garden, added the broth back and the smoked meat all cut up. I let that simmer for a bit and added potatoes and fresh carrots. I cooked till they were tender and man was it good! The broth had a nice smokey pork flavor and the meat melted in your mouth.
