Default The Christmas Smoke

The Christmas smoke has begun. I went to go pick up the brisket and discovered it was just a flat. It had been trimmed. I can work around that. However,this is the biggest flat I have ever seen. Judge for yourself...

Wow, I'll say it's the biggest flat I've ever seen. Can you imagine how big it was as a Packer, before it was trimmed?

Well I couldn't just leave you hanging, could I? The brisket came out really good. If you look closely at a couple of the pictures, you can see the smoke coming off of the brisket.

Everyone loved it. I got compliments from everyone. With all of the food that was there for diner, the brisket was the only thing that was completely gone.

Now I can rest.

Mista, that was a huge brisket judging by what I'm assuming is a 1lb fatty next to it in the first pic. Sure looks good though.

I don't know. When my friend gave it to me, it was from the butcher in a plastic bag with no tag. I know it was well over 10 lbs though.

I did have a good Christmas. Family, friends, food, brandy and a really nice nap after dinner.

I think that will be my tradition from now on.
