Unfortunately it looks like we had our last cook of the year yesterday. Somehow I have something going on every weekend from now till next year. Hopefully I can find some time but who knows. Anyway....
Picked up a couple racks of ribs and ran em at 250 using 3-2-1. Foiled with some butter, sauce and brown sugar. They took closer to 7 hours to actually get tender (was probably more of a 3-2-2) but they came out a nice color and had a great taste. Probably could have been a bit more tender for my liking but overall I was happy. Enjoy!

great looking ribs. You need to sneak some time to smoke other things even if it is just a fatty or some chicken thighs since those cooks only take a couple hours tops!
