The shoulder ham is cured and tastes like ham.

Without knowing more, I'd say the ham is cured.

Different muscles so different Flavor and texture. Most times Pulled pork is made from the Shoulder but some people prefer the Ham, it also can be mixed for a unique flavor profile.

Yes there is a difference. A true ham comes from the hind leg of a pig. In this case a pork shoulder and a shoulder ham come from the front leg. A shoulder is considered to be dryer and tougher than the butt. The butt is usually used for the ham because of this. Ham made from the shoulder might be called a picnic ham. Confused? The word 'ham' means that piece of meat has been cured or preserved as apposed to a shoulder or butt that are raw untreated meat. Also the word ham may vary from place to place and even country to country. The bottom line is that a ham is processed and a pork shoulder is not. And also the better ham comes from the hind leg and the shoulder or butt is dryer and less expensive.
