Default tired of turkey so I made some ribs

Might sound crazy but I wanted to see how the offset I got over the summer handles in temps around the freezing mark so I cooked 1 rack of spares!

Crusied along nicely needed wood a few minutes quicker but the way it handled I'd be comfortable using it all winter (and sitting next to the fire box was pretty comfortable too)

Sorry Pics are camera phone, also made a dump cobbler for later...

just dump a can of cherry pie filling, can of crushed pineapple, throw the cake mix on top dry, top off with some butter and bake abt 350... The juices bubble up into the dry mix... We Usually do it in a dutch oven camping

I am still learning fire management with this cooker. I was adding wood when it dropped to 245... Id say it averaged 260 the entire cook minus one spike to 300 (not sure how that happened... extra dry wood or left door open too long... no ideal...)

rub was a little pepper, brown sugar, garlic powder, real simple&basic...

Last 30 mins added tiny bit more brown s, and a splash of honey water as they came off... (Not enough to make it a candy rib)

Hickory and Cherry...
