Default County Fair Turkey Legs?

I'm sure it's been posted before but I can't seem to find anything on making the turkey legs they serve at the fair. You know which ones - They're basically ham on a stick.

Can this be done on a WSM? What temps am I looking at? Since I'm aiming for something ham like does it need to be cold smoked? Or can I get it accomplished over 200?

I'm sure some people don't use the quick cure and just smoke them. Which is good don't get me wrong. All the ones I've ever had were pretty pink inside from the nitrates. The one they have at Disney world are also very hammy.

Great minds think alike

Kinda odd that it's all shredded. I'm not even sure that's the texture I'm looking for. The problem with search for this recipe is that there's lots of "smoked turkey legs" which our usual BBQ goodness. I'm trying to find that flintstone club like thing they serve at the fair.
