A quick tip for any stock makers out there in advance of Thanksgiving. Call any local butchers that make their own turduckens early next week and have them set a couple of turkey, chicken and duck carcasses aside for you.
Brown the bones in a roasting pan and use these in your standard chicken stock recipe. It makes an awesome dark poultry stock which is great to use in your stuffing, as a boost to your gravy, to baste your turkey (if you're so inlcined), and any other place that you might use stock in your Thanksgiving dinner. It also makes for a great soup base for any of your leftovers.
