Default • Black Peppered Smoked Salmon

Smoked a side of salmon tonight.

I washed it all off and covered it with a mixture of salt, sugar, black pepper and a bit of my rub and wrapped it up for a few hours:








I took it out the fridge and washed off the "cure" and sprinkled some more pepper on top and let it dry for a bit while the fire lit.




I put it on the smoker with some lychee wood smoking away:


By the time it was done it looked like this:


Had it simply on crackers with a little mayo and hot sauce.




It really hit the spot! Good stuff I tell ya!

That looks real good! I'm more for the simple approach to salmon, though: EVOO and S&P. I'll have to try yours!
