is the low score dropped for each category? I should know this by now......

KCBS.. Yes. Low score per meat is dropped. Top 5 are used. Max score per meat = 180. Cheers!!!

By each category I meant taste /tenderness / appearance

Lowest total/cumulative score by judge after it is multipled by the weighting factor.
