Default Smoked Duck

im going to smoke 2 ducks tomorrow afternoon and was wondering what were some good marinades/recipies to use. ive done some research on the forums and saw a couple of recipies but not that many. i dont have much more time to do research tonight as im going to a boxing event so im turning to you guys to help me out. any help would be appreciated.

i plan to brine 1 of them in buttermilk overnight. as for the marinade for the other and overall rubs and stuff i dont have much.

thanks in advance,
ryan

Pound these fresh items in a mortar and pestle chervil, shallots, garlic, sage and thyme. Put it in a plastic bag with some lemon zest, grated apple and either apple cider or apple brandy.
Just overnight will do!

Not much help I'm afraid but I've done wild duck breast on the smoker, got the recp. from the DU mag - brine w/1 cup kosher salt (3 qts water) 1 cup brown sugar 1/4 cup italian seasoning, 1/4 cup garlic powder, 2 tbls black peper, 2 tbls red peper flackes 4 bay leaves. Refrige ducks in brine for 6 to 24 hours then smoke to 135*. From Jul/Aug 2011 DU mag. by Scott Leysath.

Came out good. Also had ducks rubbed w/ greek seasoning (whatever that is) and smoked that were good.

Let us knw hw it comes out.

If you like Oriental flavors, this is my favorite. Works well with pieces, whole or spatchcocked.
