I'm looking into doing a event at our local church. The event is a car show and I thought I would do some pulled Pork shoulder/butt's at our booth. I can do low and slow the night before leading up to the event, but I'm not sure what to do during the show. What temp and how long? Gonna have two uds, and a wsm when the show takes place. I think I can have at least twelve shoulders/butts done when the show starts, just dont know how to keep them coming when it starts to pop off. In the backyard I do 230 till there done. Any ideas would be much help.Would hot and fast shoulders/butts work? New to the smoking game and I have no clue..
