Default First Rib Competition

Just did my first competition this last weekend. I brought a good friend to help out with the cooking.
It was different than most competitions, as we had to cook 12 racks becuase the ticket buyers were going to taste all the ribs.
Using an 18 and 22 inch WSM, with one rib rack, there was just enough space.
They provided full spare racks, which we had to trim and dress...not a fun start to the day.
Got the ribs smoking at 10am for judging at 3:15.
Cooked three hours and got a real nice bark, then foiled with honey, brown sugar, and apple juice.
Turn in time was changed and threw most of the teams off. I handed in some nice ones, but I would have had a better turn in if I timed it better.
Overall we didn't place. Had a great time and met lots of good people who also love BBQ.
I can't wait to do it again.
The forum was very helpful in preparing for the comp, so thanks to everyone who posts here.

Changing the time isn't cool! I have a strict timeline, that would screw me up bad.
