Default Big News! fire box to make your smoker temp. under control

Following is my design of COLD SMOKE Generator.
When you use "wet" chips or saw dust or pellets, it produces SMOKE, the higher the speed of the fan, the lower the smoke temperature. Excess fresh air just lowers temperature of smoke. So it is called COLD smoke generator.

A few days ago I fill in DRY wood pellet by mistake, instead of smoking,it burns in flame, and temperature is higher than 570F. I pull out of probe when 570F to avoid burning probe down. So real temperature must be higher than 570F.

At each fan speed the temperature will stay very stable.
You can change speed of fan and in turn change the temperature.

Now you can replace your fire box in your offset with this generator.
It is good to do low and slow smoking

In following picture, the fuel bin size is about 7 liters. If considering bulk density of pellet of 650 kg per cubic meter, the fuel size will be 10 lbs of wood pellet.

Mounting is very simply, just drill a hole of 1" dia. in your smoker.

Then you can do COLD SMOKING and low and slow smoking.
