im just begining the interior build out on my vending trailer, i had the shell made custom from cargo south , vending windows, white metal walls, insulation etc, as far as the cabinets go ...can i use wood cabitnets, purchased new from HD and the painted in a gloss white? or do the cabinets need to be made of metal,? ...i live in Kansas

The KS state food license regs state the walls, floors, ceilings, cabinets, counter tops, etc must be smooth and easily cleanable. The state does not require NSF stainless steel.
I have found that Kansas is different from area to area regarding state inspectors. A great deal of latitude is allowed for each inspector to "interpret" the regs. Here in SW KS the inspectors are a bit more lenient than in the metro areas. In metro areas you also have to deal with local (county & municipality) rules/regs/licenses/fees that are sometimes imposed on top of the state regs. I suggest that you contact your local State inspector and tell them you are building the interior and ask him/her if your choices fit the regs.

In Ohio you must submit your plans for approval before you can build. Most states are the same we here have the Ohio revised code your state I'm sure has something similar that's what the HD goes by.
