Wow...what a day! As a judge we saw AWESOME turn in's. Scores will be close!!!!



Sweet Smoke was there!






This is a trailer made out of 2'x4's...yes a wooden trailer with a fire breathing smoker on it.

I think the initial plan was for 45 teams. Well that grew to 61 so we were PACKED into the room........It was 60 degrees in there when we started but by ribs we were all sweating!!!!

Ok...if you made it this far you get to read my contest review!!!

1. No "chicken lickers"! I watched for em'.

2. We filled out comment cards. The reps were real good about saying they were not mandatory but if you give a score of 6 or lower...help the team out and fill out a card.

3. The 6 chicken entries that hit our table were GREAT. 5 were thighs and 1 was drums. Thighs were all bone in with skin. All had bite through skin and the taste was right on. 5 thigh boxes had 6 pieces per box and 1 had 9! Yes, they were small pillow of chicken. I detected Blues Hog on 2 entries. I'm not saying BH scores down...just noting it for those that have been saying BH is over used.

The drums were arranged in a spiral pattern alternating legs facing in and out. It was moist, with great skin but the taste wasn't WOW. All of us afterwards said taste cost him a perfect score.

4. Ribs were great over all. We got to judge 7 entrees!!!! All turn ins were spares...no baby backs. Most were 4 over 4 bones. One was 3 of 5 bones...don't do that! It takes away from appearance. A full box just looks better. 4 had great tenderness but 2 were not there.

All were sweet and 2 were a little on the spicy side.

5. Pork was just OK. 3 entries were money muscle, bark, and pulled. 2 were MM and bark...and one was bark and sliced. 3 tasted great...rich pork with some smoke.

6. Disappointed in the brisket entrees. All were slices and 2 boxes had burnt ends. One of the burnt end boxes weren't any different than the slices so it didn't change his score from me. The other burnt end was "heaven"! I usually try the slice first...then form any opinion on the score in my mind...then try the burnt end. This BE took his score from a 8 to 9. It was awesome.

Had a good time and all of the cooks I talked to said it was a great contest. Till next time.

Looked like a great comp. We wanted to go so bad seeing it was only 3 hours down the road, but too many other things going on. Thanks for the pics and the review!

I so wanted to make this my first competition (in the backyard division), however I could not get out of an out of town work trip that put me back in Cleveland way too late to prep. Next year is what I keep whispering to myself.
