5-6 briskets, 8-10 butts, and 9-12 slabs depending on what they carry

Butts come in an average case weight of 60 lbs, so 8 butts. Brisket cases are 60-70 lbs average. I've had as few as 3 briskets and as many as 10 in a case (briskets aren't sorted by size). Smithfield puts 9 racks of full spares in a case, Other processors will put 5 2 slab cryo's in a case. The St.Louis ribs they sell frozen come 14 racks to a case.

Cases of meat are done by weight not # of items, thus they can differ slightly brand to brand.

My experience is butts 60 to 65 lbs. briskest here are usually around 80 lbs. chairmans st Louis cut ribs are always 18 slabs per case.

I always get six briskets in my cases of 9 and ups from the depot. I have had cases anywhere from 60-110 pounds.

ribs vary by brand
