Default Ribs Questions

KCBS rules state that meat must be smoked as a whole piece. Does that mean a slab of ribs cannot be cut in half to fit on a small rack?

Do ribs keep well in a Cambro like a butt and brisket do?

Pork is the only category required to be cooked whole and not parted. There are no restrictions on rib size or trimming. They must include the bone and can't be country style.

Can anyone comment on holding ribs in a Cambro or cooler?

it's doable. but be sure to A)vent first, B)don't stuff the cooler with them, and C)don't leave them in there too too long. maybe 1/2 hour max.

Thanks, that is what I was looking for. I figured since the meat is thin compared to a butt or brisket, there had to be some sort of limit for resting ribs.
