Default “Pork Shots” (Pork Candy)

Hey all,
Sqwib checking in.
Miss you guys.
Sorry I havent been around and posting.
Hopefully I'll be able to start up in the Fall.

For all of you Die hards that cant wait to get to the good stuff, scroll down to “Pork Shots” (Pork Candy)
Hers some cliffnotes
Daughter just graduated and is off to college, Ursinus
Our Yellow lab died, christmas morning as many of you know.
The family talked me into another dog.
So we picked out a German Shepherd from a breeder, Now I have no grass again.
Finished building my Koi pond, (Google SQWIBS Koi pond)
Finished the pavers alongside the house and the back yard, tore down my shed and potting bench and built a fence.
Added a serving area next to the smoker, picked up a Stainless Steel Brinkman grill from a co worker to accompany the frankensmoker

Anyhow I got to use frank as a warmer for the Graduation Party for Philly Cheeseteaks, Wings, Cheese sauce and Pork Shots. Worked out really well

Here's some photos.

Lucy 2 weeks before we had to put her down

Picked out a puppy but she wasn't ripe yet.

Ok now onto the good stuff
Basic pork shots
10% my rub and 90 % brown sugar, smoked with cherry medium to low on GOSM for near 2 hours on a baking pan, removed from pan to directly on grates then added a bit of love, (deglazed pan with JD ). Served hot with glaze poured over top.

Making a shopping list to mimic this for the weekend. Looks amazing! Sorry about the dog I had to put down my dog of 16 years last month. Kills me to even think about it.

Love the Pork Shots, I also do them quite often for demos and public classes, easy and flavorful. I like to take a brick of cream cheese, because it is moldable and easy to work with...ball up a bit and put it in the top of the pork shot before I sprinkle with dry rub, crazy good stuff.
