Default Testing Backwoods Party Today (On Going Updates)

Was very lucky to borrow a Backwoods Party so I could test it out and see how I like it. Might be getting something new for home and competitions. So this is the first time firing it up. Cooking 2 butts and 3 racks of ribs.

I'll keep updates coming as the day goes on. My initial thoughts are this thing is solid. Love the slam latches. At 8am put water in there and fired up the charcoal basket. I will be looking into a larger model if I decide to get one, but the party should work great to test.

This was last night setup under the canopy as it will be hot today. Canopy is lowered until the morning. I don't normally have it that low .


Lit one corner and opened bot side vents fully at 8am. At 8:45 it was to 210.

At 9am the temp was at 225 and I put the butts on. It wasn't to where I wanted it yet at 250, but figured I would see how it comes up in temp this early with putting meat on. When I opened up the door and put the butts on it dropped to 200 after they were shut again. Took about 10mins to get back to 225 and rose steady to 250 over the next 15mins so definitely happy with that.

Right now after 1hr of meat being on it is running steady (technically at 255 which is fine by me). It will be interesting to see how long the charcoal lasts as I've heard the party can run anywhere from 4-6hrs depending how full you get the basket. I packed it as tight as I could and mounded it up what I would consider fairly high.

I've reloaded charcoal in my WSM many times before so we will see how this compares. Should be fairly easy I'm guessing since you can pull then entire firebox out. Can't do that easily with a WSM.

Here are the butts after 2hrs. Temp was already to 135 which is pretty fast for me, but I won't rush to any "this cooker cooks faster" judgement till much later on as it can slow down and/or stall at any point in time. The cooking chamber definitely seems moist. Got some advice that the bottoms of food can have a lot of the rub come off due to this and I did notice some of the rub coming off. Not really worried about that on the first cook. Not going to rerub this time.


Here is the charcoal after the 2hrs. Seems like more than half left if I guess. Temperature had held at 250 +/- a few degrees with no problem.

Ok so just shy of 4hrs at about 12:40 (3hrs 40mins of cook time) and they butts were at 160 and I put them into foil. I will say now that they do seem to be cooking faster in here (one cook of course does not mean anything). They are a little smaller than what I normally cook around 7lbs (normally do 8lbs), but this still seems fast.


Ok so last time I said it seemed like maybe half the charcoal was left (it was probably more like 3/4 and after another 2 hrs it still seems the same . Ribs will go on about 1:30pm estimating they will take about 6hrs at my normal 3ish-2ish-1ish method.

If I do reload charcoal what I plan to do is take the pan out shove all the lit to the back of the box and dump more into the front portion. Also for a water pan report it is about half evaporated.

Looking good .. I love my party so far. I have only cooked 2 times on it and it seemed to cook fast as well.

Thanks. I'm about to put the ribs on and I wondering if I should wait. People showing up around 7:30ish to eat. But if they are done early I can always hold them. Going to hold to what I said I would do. I'm guessing the steam might be the speed up culprit. But hey if it cooks faster then who cares .

Ribs rubbed.



Here they are on. Went on at 1:38. This is the first time the temp didn't rebound immediately. Dropped to 200 as I had the door open a couple time as I also added more water. As I'm typing this 20mins after putting them on the temp is just back to 212, but quickly climbing. The coals had a lot of ash on them and I tapped the pan to get them stoked and also opened up both vent. Once it had hit temp I had the right vent completely closed and the left vent open maybe 1/4 or 1/5. I'm guessing I will be adding more in about 30-45mins just to be safe and avoid it getting too low.

So dead on 6hrs and both the 7lb butts were done. Cooked at 250 the whole time. Pulled them off at 190. Want the money muscle to slice and get chunks. They will rest for 4hrs till dinner around 7:30. I've never seen butts cook so fast at 250.


Still running fairly strong with the charcoal. 6hrs of burn at 250. I have pulled back the temp to 225-230 for the ribs as they already seem to be cooking fast too. I'm guessing the charcoal could burn for another hour or 2, but I don't want to run out so I'm going to reload shortly. Not a full reload, but going to add more.

So here is the reload step. Took the pan out.


Shoved it all back and just put in more. As of now nothing crazy has happened to the temperature after putting the tray back in place. So seems to have worked. This will last past the ribs I'm sure so I will let it burn tonight until it is out to see how long it runs and try to give a lb/hr ratio.

So here are the ribs after right about 3hrs. Cooking around 230ish for most of that time. The charcoal reload was successful as no big temp fluctuations.


Foiled and back in for potentially 2hrs. I start checking them after 90mins so they don't overcook in the foil. Learned my lesson there earlier this year.
