For fathers day my father in law wanted bb ribs. I decided to try and do them hot and fast. Loaded the smoker with lump and got it running around 330 according to the WSM thermometer. Rubbed half with salt and pepper and half with SM sweet seduction and pecan. Cooked them for 2 hours and foiled them with a little bit of honey and brown sugar. 45 minutes later I unfoiled them and hit them with sauce.
Cooked them in 3 hours and while they weren't the best ever, they were still real good. It was nice being done in 3 hours but I prefer low and slow. No pics just a story.

I've been doing back and spare ribs at 275F, I've had good results.
