Hello to everyone.
Any of guys have any tips with the judges taste preference down in Texas. I'm competing in my first L.S.B.S. Event next weekend. I've done a few in florida and am curious if the judges in Texas like less sweet and saucy and maybe more smoky and savory. Also any tips on LSBS comps is greatly appreciated. JB |

I compete in Texas some and have found they like very little sweet sauce on Brisket. in fact, I put NO sweet sauce on brisket at all. Ribs, they don' seem to mind sweet, but they want a kick of spice at the end. Find out what kind of BBQ the locals like in the contest area and see what that tastes like.

Don't sauce your brisket. Make your ribs fall off the bone and sweet. You should be allright.
