Default "Chef's Choice" Ideas

Doing my 3rd ever comp in May and this one has a Chef's Choice contest Friday night. What kinds of entries do well? Not looking for specific recipes, just general ideas.

Oddly enough, there's a seafood category Friday night too. They provide 2 lbs of seafood (TBD) and you do your best with it. Is it generally "non-meat" entries?

If Chef's Choice is unlimited - do dessert - even if there is a separate dessert event. If it has to be savory, do some kind of beef.

We typically go the rich and sinful route...Dessert! Even better if it's got chocolate in it. Especially if it is an ancillary category on the 2nd day of competing. By that time, the judges are "meated out".
