Default The wife was away

So my wife was out all day Saturday--how sad is it that all I could think of was I had the kitchen to myself...best take advantage of it.

I had never tried making Moinks before so figured why not:

Ingredients lined up--using some of my home cured bacon:



Ready for the grill:



All done...the picture is a lot darker than the finished product:



Speaking of bacon...we like to give gift packages at Christmas, smoked salmon, bacon, smoked cheese and smoked nuts...and the bacon inventory was a bit low so threw another 10 pounds into a dry cure:



Salmon also needed replenishment:

I had ordered some wild caught sockeye salmon shipped down from Alaska:




Into the cure:



I like to add some fresh dill and a few shots of a nice aged dark rum

I had some beef jerky marinating and into the cookshack it went:



Out it came:




All said it was a good day-kitchen all cleaned up before my wife was home. Thanks for looking

Hey, those MOINK balls don't look "wrapped" in bacon, but more of a "GI Joe Kung Fu Gripped" in bacon Though I bet you get more balls per strip of bacon, so I dig it!

Ya a learning experience. The bacon shrunk and pulled away. Will use a full strip next time. No such think as too much bacon

I was just ribbin' ya...I think they look great! Bacon is expensive these days and meatball size varies. 1/3 of a slice is too small and a half a slice too big sometimes. Ya do with what ya got

Perhaps we need a committee to propose international meatball diameter and bacon strip length standards

Ya all I use it for now is jerky. I bought it years ago before I figured I could get my WSM to hold temps on overnight cooks
