Today for the stuffed/cook it like ecode throwdown, I made some Pork stuffed Portuguese Sweet bread it went something like this.
The right Butt was rubbed with Big Butz pig pollen and the one on the left was with Bigmistas perfect pork rub. I thought they were both great but totally lost track of which was which . I thought for sure I would pick up on the cinnamon taste after resting (I love cinnamon) but couldn’t so I ended up just pulling them together. ![]() I made a sponge. ![]() Then I scalded some milk and added butter sugar and salt. ![]() Whipped up some room temp eggs, added the milk mixture and the sponge to the mixer bowl and slowly mixed in about 6 cups of bread flour until it looked something like this. ![]() Then it went on to a floured board where I kneaded it for about 10 minutes then dumped it into a greased pot covered and let rise for a for about 2 hours. ![]() After 2 hours I punched it down gave it another 5 minute knead, folded then back in the pot for another hour, here it is folded. ![]() I was really worried about timing with the butts and the dough but somewhere between the mixing, kneading the dough and mixing up which butt was which the butts were removed and rested in the cambro for about two hours before this. ![]() After the second rise I grabbed some of the pulled butt and mixed in some Big Butz Original. Formed some dough and stuffed them with the butt mixture. ![]() While they were proofing one last time I brought the avocado up to 350 degrees, brushed the rolls an egg wash slit the top and onto the avocado. ![]() After about 15 minute….BAM!!! Portuguese sweet bread (Massa Sovada) stuffed with pulled pork. ![]() ![]() I’ve been wanting to do these for a while and was worried how the rolls would hold up with the stuffing, I must say they totally exceeded my expectations they were great and if you are wondering what they tasted like just think pulled pork on Kings Hawaiian rolls (Massa Sovada).
