Default Pink in my bird again....

but this time, it was only the smoke ring! Turns out the problem WAS the thermometer. I know I know.....get a maverick I'm working on building my budget for that as we speak. I cranked up the heat to 325 - 350 and used sweet and smoky along with Stubb's original. Thanks to all who kept me on the path! I can finally say I fought the bird and won! Feels good! Will post pron later on

To me, if the meat is still a little pink, that means I haven't overcooked it.
It's not a problem to put the Chicken back on the grill and cook it a little bit longer.

You can easily cook the chicken (or any meat) longer if you want too. But if you
overcook it you can't undo it.

And as you said, a good thermometer is very helpful to cook meat to the right temp.

This is what makes the Thermapen worth every cent. You know exactly where you stand within 3 seconds.

I got the cheapo Thermo pen, same company, forget the exact model, but it cost around 25 bucks. I think it's not "Instant Read" but it's well within 5 seconds of getting an accurate temp. Digital, easy to calibrate.

I have this one and love it. Can buy 3-4 of these for the price of a Thermapen. And the 2-3 extra seconds to get a temp reading won't hurt anything. I think it is the RT-600c or something like that.
