Default Old Dave/Ruhlman it's a TIE!

The WINNER was ME!For trying both methods. Both are great.Old Dave's may have had a little more pronounced flavor profile. You will not be disappointed if you try either method.Homemade is SOOO much better than storebought, there is no comparision.Try one or both, you'll be glad you did.I followed each one's directions for corning.I used Thirdeye's pastrami rub, smoked em with pecan til 150f internal temp and did a 20 minute pressure finish on all cuts.2 pastramis and 2 corned beefs.

Old Dave's Dry Brine/inject

Ruhlman's Wet Brine

A tie??? Man, I had a buck on Dave.

I figured it would be close, both are good recipe/methods.

I don't think you can go wrong with either.I guess I should of had a couple taste testers and had them to score each to be legit.
