Default It sure was a SMOKIN Christmas for Wampus!!!!

So I did quite a bit of work with the smoker(s) this past few days.
Here are a few highlights:

Saturday it was time to smoke the wet cured ham that I cured for 8 days last week:


....which went in the fridge to rest and distribute the smoke flavor and was served on Christmas Day at Mom & Dads. It was farkin AWESOME!!!



Then on Christmas Eve, I smoked a few fillets of rum marinated salmon:


......AND 6 lbs of Neil's Nuts (without as much spice my first time out) which I gave as gifts to the family and had some around for munching:





And then last but CERTAINLY not least, I hot smoked a 15 lb Prime Rib Roast on Christmas Eve as well:


....which I just realized I did NOT get sliced photos of....







Hope y'all had a great Christmas, cuz WE sure did!!!

I sliced the ham over at Mom & Dads and didn't have the camera handy.
I had a bit of "spirits" on Christmas Eve and that's the only thing I can think of that caused me to forget the sliced photos. THAT and we were all really HONGRY.
