I was wondering for your professional competitiors, do you de-bone the thighs before you cook them? Same for those who turn in breast meat?

I think you will get mixed answers about deboning chicken thighs. I know people who win deboning and not deboning. I would never consider a bone in breast since you need to slice it to get 6.
