Default Santa Maria Style Flat Iron!!!

Seasoned up a nice flat iron with The Rub Co. Santa Maria Style Rub. Pulled it when it felt nice, let rest for 10 minutes and gave it hell. Sweet potatoes and garlic spinach on the side. Enjoy!

Hard to describe but somewhere between mushy and firm. No I did not use internal tem. It is probably 130*ish.

That looks great. I will have to find a whole flat iron. Our plant just sends me flat iron steaks.

Looks great! Can't wait to fire up my SM Pit again. Is Flat Iron like Flank steak? Looks like it but I will go check.
