Phirst time I ate one of these.
Besides their characteristic head they also have blue grates.
I gutted them and put them in a brine for a hour...ate them with tagliatelle carbonara...

If those are the same surface swimmers I'm thinking of we have them out here!! Shot a fair amount growing up with a bb gun but never thought of eating them.. You make them look good! hehe! Blue bones are freaky though!

A Dutch Brethren just told me the blue colour is from "photobacterium phosphoreum"...it can glow in the light.
