I had this opportunity recently. My wife took the boys to the inlaws between Christmas and New Years. I had four days to myself.

1st night: Dry aged NY Strip plus the tiniest filet you've ever seen to try out a new sweet coffee rub.
2nd night: bacon wrapped figs, bacon wrapped dates, jerk shrimp, and a salmon filet with the coffee rub.
3rd night: Had two buddies over for two small NY strips, one dry aged, one regular to do a compare and contrast. The bacon wrapped figs and dates as well as jerk shrimp, and three teres major steaks, two jerked and one with the coffee rub.
4th night: lobster tail brushed with chipotle oil and dunked in drawn butter

It was a glorious four days. Every time my wife called she asked if I missed her. Is it bad that a couple times I had to think about it?!?

My wife is going away this weekend to visit family, so my 10 year old Chef jr. and I are home alone, so this weekend , he and I are cooking beef tongue tacos, with jalepeno aioli, and I think we are going to put a rack of ribs on the smoker.
