In it's simplest form (the naked fatty) it is a breakfast sausage log (Jimmy dean, et al) that is unwrapped, smoked to 165 internal, and then eaten. There are more sophisticated version as you can see in this thread.

I think you'd have to further restrict that to Scotland. Of course Haggis is the Great chieftain o' the puddin-race! Afterall, a man's a man for all that. I'd love me some of that chieftain, but it is against the law on this side of the pond.
