Its all dependent on the the fruit itself... some are sweet and some are sour as hell!! lol Taste a bit before you use it. I used to have a tree down the road when I was growing up that was pretty sweet and I used to eat them straight up all the time. But yah... when I'm making the sauce I try look for some of the more tart ones..
