Default Chicken Spaghetti Recipe

This is a weekly meal at our house with enough for lunch leftovers for both of us. And still freeze a container full. Will feed a family of 4 easily.

Ingredients:
1 Chicken - baked, smoked or rotissoried
1 lb Spaghetti noodles (1 package)
2 Jars Ragu cheese sauce
1 Can Rotel (hot or mild)
1 Onion - chopped
1/2 Bell pepper - chopped

Cook chicken and shred meat.
Cook pasta & drain. Leave in pot.
Saute onion and pepper.
Add chicken, onion, bell pepper, Rotel & cheese sauce to spaghetti. Heat on low/med till heated through.

Serve with garlic bread.
I like Louisiana hot sauce added to my helpings.

Havn't met a kid that didn't love it either. It freezes well and makes great leftovers for lunch. Usually keep all ingredients in the pantry. In a rush, I've been known to buy a grocery store rotissorie chicken on the way home to speed up and save time. If planned, the Baby George Foreman Rotissorie works like a charm until I can smoke chicken better.

We make pretty much the same thing, only use some manner of meaty Ragu vice the cheesey Ragu. Then dump about a pound of fresh shredded cheddar on it.

Rotel is a clue that it's probably a Texas recipe.

And that's a good thing! :D

i do similar but different, Saute a shreaded roasted chicken in butter and garlic. Add a few tables spoons of this stuff called 'better than boullion" (chicken flavor) and a little water. then add a lb of cooked pasta and 2 cups romano cheese. Keep heating it till the boullion is absorbed into the pasta, then add more cheese.

Thats a comfort food here.

(It comes in chicken, beef, and fish flavors and is a thick paste. used for making plain stock.)
