I love this stuff. :)
This is some cold smoked back bacon from one of my Spot pigs. an old post.... http://bbq-brethren.com/forum/showthread.php?t=69070 I use my little smokehouse to cold smoke the bacon..... http://cowgirlscountry.blogspot.com/...ked-bacon.html ![]() ![]() ![]() ![]() ![]() cube some of the cold smoked steakhouse bacon... ![]() wrap in belly bacon... ![]() roll some in a cayenne brown sugar mix and some in pepper ![]() Then Hot smoke until cooked through... ![]() They are so addicting... ![]() ![]() The bacon is moist and tender inside.... ![]() These were snacks during deer season, I wish I would have made more, they went fast. ![]() Fantastic! Makes sense that the only way to make bacon better is to wrap it in bacon. The only thing that bugs me about living where the weather is nice & warm all the time is not being able to do those long cold smokes (at least in a way that's practical that I'm aware of). I've been making slab bacon and loving it - made some pig candy with it today with Habanero Death Dust & brown sugar, etc... As always - excellent post! ![]()
