Went a little outside my normal pulled pork cook this year after I saw this on the Food Network.

Butt on at 7pm:

Auber doing work, keeping the WSM at 225° with 3 chunks of apple wood.

Woke up to this great looking site:

Had a full ring of Wicked Good Lump started Minion Method with about 6 TJ's Hardwood Briquettes.
After 18 hours, there was still enough un-used to cook ABT's and pineapples for the relish on the Performer (no pic's cause I had a backyard full of people and 6 of these so it kinda slipped my mind). Also had some wasabi potato salad and some doctored up Baked Beans with everything from crumbled Italian Sausage to Apple Pie Filling - recipe here.

Finished plate:

Hope everyone had an awesome 4th full of great beer and Que.

Thanks for checking it out. It was a great recipe for the pulled pork that I would recommend in a second. My wife has declared that I'm to cook the pulled pork like this from now on.

Pork and pineapple, one of my favorite food combos.
