Default Hard to be nice and say no.

I just got a call (one of many) from a horse farm putting on a show next weekend. My wife took the call and the lady said she was having about 50 people coming to a horse event next weekend. The I get the phone a she wants me to come set up and sell concessions for 3 hours and said 200 people will be there. I told her I would need a much larger event to be able to sell concessions and that based on 200 people I would probably only sell to about 50 of them. She said oh no, you will sell to 175 at least if not all 200 of them. I then (in a nice way) said well if you are certain they will all eat, what we could do is cook the amount of meals she would like and she could pay us and incorporate it in to the price of entry the event. She did not want to do that in any way. I told her that I was sorry and I just could not turn a profit based on what she was aking me to do.

My experience with events of this size is about usually $125-$250 in gross sales if I'm lucky. Hate to make her mad but I just can't do that.

I have to agree. Event organizers for things like this are much more confident in the sales numbers when they are not the one taking the risk. I'm cutting way back on festival vending like this next season for just that reason.

Event that size; you're absolutely right. Fixed price it to her. How she bills it is strictly up to her. For that matter I've done backyard cooks here at the house and served more than that.

We say no to those by saying "We are already scheuled that weekend, but we'd be delighted to drop off meat, buns, sauce, pickles and sliced onions for you. If you expect to have 200, we can deliver all you wish to buy at $6 / head".
