Thanks to post from the various forms including BBQ Brethren, we had the best taking turkey ever this year!! Apple juice brined 48hrs, air dried 24hrs, herb/citrus rub under and on the skin, 300 - 325 on the 18.5 WSM plus 3.5 hrs equal super moist, succulent, tasty bird!!!
