Default Turkey done too early

I put a 11 pd turkey in the smoker at 300. In 2 1/2 hrs it is done!!! I even turned the temp down to 250 for the last 45 min. Thought I'd take the turkey apart, put it in a pyrex pan with chicken broth and then into a warming drawer. Any other suggestions. Not eating for 2 1/2 hrs.

Get a cooler, wrap the turkey in foil, put it in a pan and then cover with towels in the cooler. Take out about 15 minutes before carving. This will keep for several hours.

I'm in the same boat, I moved mine to a warm oven, in a roaster with some chicken stock and wrapped in foil. The skin will be rubber, but hopefully the meat will still be moist.


My lovely wife insisted that the bird go on early, she says my mom always puts the bird on at like 7am, and I say yeah and it always tastes like S##T. Now she says, I cant believe its done so fast.
