There is a Google search box near the bottom of the page that searches just this site. Search for turkey and you have enough reading to keep you busy until Thanksgiving :)

I did the Thanksgiving Turkey recipe out of the Big Bob Gibson BBQ book yesterday (as practice for T-Day....who am I kidding, it was an excuse to smoke something) and it was the absolute BEST turkey I have ever had! Extremely moist. It fell apart not only as I cut it, but it melted in my mouth as we ate it. And it even stayed very moist and very tender for microwaved leftovers today. It's probably the only way I will do turkey anymore. And the best part is, it's super, super easy.

Easy, and amazing without a ton of work. Very simple really. If you don't have the book, do yourself a favor and get it! Everything I have cooked out of it has been awesome.

Brine Turkey 1 hr. per lb. 12 lb turkey 12 hrs. Wash off after brining required time. Put in smoker at 225-250 and smoke (I do 2.5 Hrs) Then either finish in smoker or put in Oven at 325 till done. This will crisp skin. It of 165-170 is finished. Use Brine recipe below. I use this and get very good results.

1 gallon
3 oz Morton Tender quick cure
6 oz. kosher salt
1 cup brown sugar
1 Tb Onion powder
4 bay leaves
