Default The 22.5" WSM has arrived! Time to break her in.

How often does one have an assembled smoker in their living room? On the day of the build, that's when!! All nice and shiny and clean. Time to dirty her up.

What say the brethren as far as seasoning with a nice greasy cook? I'm sure a fatty or a pork shoulder would do the trick, but I'm hankering ribs this weekend. Maybe a combo cook? Or just multiple cooks?

Btw, in case you're wondering, yes - that's a replacement door from Cajun Bandit I ordered and had waiting for me when the WSM arrived.

It won't matter what you cook if you just spray down the inside of the cooker with a thin coating of cooking oil on the first cook...

One of the nice things about the WSM is that you really don't have to do any once it's assembled. It's ready to cook! It's coated with porcelain inside and out and not bare steel, so it really doesn't need to be seasoned. It will run a little hot in the beginning but once it get a nice patina inside that will settle down.

It doesn't hurt to spray the inside with Pam or do a fatty or butt first, but it's not needed. If you want ribs, cook ribs :)
