I was watching some of the Pit Boys series on YouTube last night and came across their Bacon Chicken Sticks and decided to try it today. The video can be found here: Bacon Chicken Sticks recipe by the BBQ Pit Boys - YouTube
If you watch the video you will see he takes chicken breasts, slices them into about 3/4" wide long pieces, makes up a marinate and marinates them for about an hour then threads them on skewers and wraps them with bacon. He also makes just a version with rub only, no marinate. Here is my chicken sticks cooking on the UDS: ![]() Had to have some corn to go with it so I used the Smoked Corm Recipe that I posted yesterday and here it is cooking: ![]() Had to have some cole slaw to go with it so made up a batch. here is a plated picture, excuse the quality as I am no photographer: ![]() I have the recipes for all of the items if you need them, I copied the ingredients off of the video into a recipe, I had posted the smoked corn recipe yesterday and if anyone wants it I can send them my cole slaw recipe. The wife gave the meal 5 stars so I we will put it in the "keeper" file. Paul |

Mike I put them on when the temperature in the UDS was around 295 and during the cook I took it up to 350. For the first 10 minutes of cook time the temp was around 295-300 degrees. Turn them over at 10 minutes and then let the temp climb to about 325 to 340. Turned them again at another 10 minutes and cooked them for another 15 minutes with the temp around 350 degrees. I had intended to pull them and crisp them up on the gasser but it was not necessary as they crisped up good on the UDS.

I've got to stop coming here. I keep seeing these great BBQ ideas and there is not enough time in a day to make them all. My list grows of delicious looking things to make.
