Thumbs up Beyond Delicious Lamb Chops

My go to marinade for lamb chops is a simple mixture of olive oil, crushed garlic, sea salt, pepper, lemon juice, and finely chopped rosemary. It has served me well and by itself, produces a delicious result comparable to any fine eating establishment, provided the chops are cooked properly, of course.

A while back, I decided to see how the chops would turn out by adding some Rub Company Original Rub to the chops before I grilled them. It was an experiment that was more successful than I expected! The flavor of the marinade AND rub complimented each other in a way that can only be described as beyond delicious. That, plus the consistency of the coarse grind of the rub added a layer of texture that is just off the hook. I decided to do this again last night, but let the chops sit for 2 hours after I rubbed them down, as opposed to 30 or so minutes. They were even better this time than the last time!

I used three chops from my Costco meat score last week:



Before I marinated, them, I removed the membrane from the strip side of the chops:



Then into a bag with the marinade so they could sit all day in the fridge.

Later on, I pulled the chops out, and gave them a generous coat of Rub Company Original, and let them sit so they could come up to room temp:



A couple of hours later, I fired up the Kingsford Oval for indirect cooking. When the coals were ready, I added a few small pieces of oak for a light smoke:



Time to put the chops on:



After about 10 minutes, I flipped them:





When the chops were nearly done, I placed them bone side down, so the meat near the bone could cook a bit. I know it may seem a bit weird to do this, but I do it with all chops I cook and helps create a more evenly cooked chop, with none of that super rare meat next to the bone:





After the chops rested, I served them with a bit of garlic bread and a nice garden salad:

Everytime I browse the meat counter at Sam's I see the packs of chops and instantly think of your cooks. I still don't know why I haven't given it a try but it is definitely lurking at the top of the list.

Looks delicious - I love lamb and don't cook it nearly enough.
