Smile Chorizo & Cheese Tacos on Homemade Tortillas

One of my favorite taco joints happens to be that for two reasons: Their spicy salsa roja, and their to-die-for chorizo & cheese tacos. The rest of their food is really good, but these two things really stand out. I've also been trying to duplicate their salsa roja for years, with little success, so I just buy it by the pint and take it home. As I happened to have some of this glorious salsa roja on hand, I decided to try my own take on these tacos.

First, I used Salvadoran Chorizo, purchased at our local Mexican market. This stuff is the bomb, and is rich, spicy, and complex. It comes in little links like this:



I then removed the casing from the meat:



Then into the cast iron skillet:



After cooking a while:



When the chorizo was done, meaning all fat rendered and the meat had a nice crisp to it, we loaded it onto fresh tortillas The Missus made the other night, then topped with fresh Cotija cheese, pico de gallo, and lots of salsa roja:





It was outstandingly delicious! The little crispy savory bits of spicy chorizo combined with the cool cheese and pico de gallo played perfectly off the salsa roja.

Ever make something that was so good, you crave it the next day? While this doesn't happen to me often with my own food, this was one of those rare occasions. We will be doing this again, and soon, I hope!

The most simple of dishes often are of the best as well. I'd love a couple of those.
