Simple Cavender's Greek seasoning. Pear wood. UDS. Went in at 1 AM and was out resting in foil by 8:30 and I was slicing it by around 10. For whatever reason this one cooked pretty fast. I didn't take the running temp of the UDS, but it was up at 350 at the least. Brisket sammiches for lunch!:thumb:
