I saw these chops laying at the wholesale store and couldn't leave them there.
Brined them in water,cane sugar and Lawry's.....made them Dirty with Todd's Dirt.
For sides a twice baked sweet tater and a Phresh smokey salad.

That looks crazy good! I've been having good luck with flavoring brines too. The sweet taters look delicious!
