Went to the store to pick up the fixin's for ribs tomorrow. Planned to do the ribs Johnny Trigg style. But found out that no one out here in the desert carries Tiger Sauce. Any suggestions on what off the shelf substitutes I might try to replace Tiger Sauce at this late moment?

Corn syrup, red food coloring and cayenne pepper.
But, I have tasted Trigg's ribs and you really don't need it to make some good Trigg style ribs.

Tiger sauce is sweet and slightly hot, so just add more honey or brown sugar.
But, I'd go with what I posted above to be closest. As I recall, there isn't a lot of vinegar taste in Tiger Sauce.

OK, you forced me to dig out my tiger sauce that I haven't used in a long time. I taste sweet, heat, a hint of vinegar and a smaller hint of worsty and tamarind.

Not familiar with Tamarind. Where do you find it/look for it at the grocery store?

I've been making my own for a while. In fact, I'm basting my goat with it now. Here's what I use.
1 Cup Apple Cider Vinegar 1 Cup Worcestershire Sauce 1/2 Cup Raw Sugar or Dried Honey 2 TBSP Thai Pepper Paste Mix all together and simmer on low heat for about 5 minutes. Cool and enjoy. |
