Default Firsf fattie

Gonna try a naked fattie for the first time and got a couple questions.
Do u just roll it in the rub or do u tear it apart season it all then roll back up? What internal temp do u pull it off at?

Just roll it in rub (or, just unwrap it and cook it). 165 internal is still the recommendation for sausage.
