We are preparing for our first competition (KCBS) in a few weeks and I wanted to clarify a rule. I know that gas/electric is not allowed in cooking the meat, but what about for sauce etc?
Sauce is a separate category in this competition. I do not want to get disqualified for something like sauce! It sounds to me from reading the rule that it just can't be inside the smoker. Thanks!

Since "sauce" is not a KCBS category, it will default to the contest organizer to determine the rules regarding gas, electric, etc. Regards, Tim

You can warm your sauce to put on your meats with gas or electrical devices as long as the meat is not in the pan while it is on one of these heat sources. For the sauce contest you will have to ask the organizer about the rules as the KCBS does not sanction the sauce contest. good luck keith

Get a Weber Smoky Joe and use it to heat your sauce pan. Hardwood lump charcoal works great for this, I d it all the time.
